Mushrooms associated with Staphylococcus aureus poisoning in Spain


A few people in Spain have gotten sick after eating certain brands of mushrooms.

Two cases of staphylococcal food poisoning have been reported involving mushrooms in olive oil in glass bottles of the El Agricultor brand. He said he was notified by officials.

Staphylococcal food poisoning is caused by eating food contaminated with toxins produced by Staphylococcus aureus.

Symptoms of staphylococcal food poisoning usually develop within 30 minutes to 8 hours after eating or drinking the contaminated item and do not last more than a day. The most important treatment is to drink plenty of fluids. Cooking kills the Staphylococcus aureus bacteria, but the toxins are not destroyed and can still cause illness.

The most common symptoms of histamine, also known as scombroid fish poisoning, are a tingling or burning sensation in the mouth, facial swelling, rashes, hives, itchy skin, nausea, vomiting, or diarrhea. Resolves within hours without medical intervention.

Histamine production is associated with food mishandling due to storage at inappropriate temperatures. Once produced, histamine cannot be removed by normal cooking or freezing temperatures.
